Grilled chicken, yellow rice, and guacamole!
Don't you think {guacamole!} should always be said an an exclamation?
It was hard to decide which recipe to share first on the new site, but it seems to make sense to post the one that I'm actually making for dinner tonight. This guacamole recipe is so easy and delicious, I find myself making it almost every week, and have gone from buying one avocado at a time to picking up two or more, so I can whip up a fresh batch of guac to eat with leftovers.
Tonight, I'll be grilling some chicken leg quarters--skin on, thank you very much--generously seasoned with Slap Ya Mama Cajun Seasoning (a blend of salt, red pepper, black pepper, and garlic powder) and basted with melted butter, fresh garlic, and key lime juice. Lemon juice would also be delicious, but when you have a bottle of Nellie & Joe's Famous Key West Lime Juice in the fridge, why use lemon? Plus, the Key lime flavor really complements the guacamole. (If you can't find this with the bottled lemon juice at your grocery store, look on the aisle with the margarita and daiquiri mixers.) A bag of Mahatma yellow rice will round out the meal.
Sallie's Guacamole
1 Hass/California avocado (If using a Florida avocado, double the following ingredients.)
1/2 tsp. kosher salt
1 T. salsa
1 tsp. minced garlic
1/2 tsp. lime or Key lime juice
1 T. chopped onion (I usually omit this, as I'm not a fan of raw onion and the garlic gives it a nice bite.)
Tip: Spray the top of leftover guacamole lightly with Pam to help keep leftovers from turning brown in the fridge.
